I know that strawberries don’t come into season until June and, let’s be honest, there’s nothing better than locally grown and freshly picked strawberries. But when spring rolls around, I always start craving strawberries. Since most markets carry them year-round, this is a craving I can indulge in any time of year.
Recipes featuring strawberries are wonderful to enjoy at Easter, especially since there are so many, many ways to enjoy them. If you’ve been following me for a while, you know that I’ve created quite a few recipes with strawberries as the starring ingredient.
That’s why I’ve decided to spread the love and get us all prepared for Easter celebrations and strawberry season – with recipes for every meal of the day. Below, you’ll find options for drinks, desserts, main courses, and salads, each highlighting the deliciousness of the strawberry.
Read on for a post that helps tame those strawberry cravings! You may be surprised by all the many ways there are to enjoy them.
Unique Strawberry Recipes: Drinks
Fresh Strawberry Margaritas
This recipe of mine is tasty, refreshing, and surprisingly simple. Including the ice, there are only six ingredients. It’s super fresh, but still manages to pack a punch – even aside from the tequila.
Fresh Strawberry Juice
Sometimes, you just aren’t in the mood for a boozy drink (or perhaps it hasn’t hit 5 o’clock quite yet). You could always turn to the classic strawberry lemonade, but the simplicity of this recipe really draws me in. You can find this three ingredient, rejuvenating strawberry juice on Spice Up the Curry.
BONUS: Strawberry Daiquiri Ice Pops
Yes, yes – this isn’t really a drink. But let’s face it, strawberry daiquiris are already basically an ice pop in a glass. And if you’re dead set on a beverage, just forgoe the freezing and serve directly after blending. If you’re already dreaming of hot evenings spent on the patio, this one’s for you.
Unique Strawberry Recipes: Main Courses
Strawberry Goat Cheese Bruschetta
This dish from Umami Girl is probably the recipe I’m most looking forward to trying. I can already taste the toasted baguette slices, creamy goat cheese, and the tart sweetness of the strawberry cutting through – all balanced by a creative medley of herbs and honey. Yum!
Strawberry Basil Chicken
Strawberries paired with poultry might sound odd at first, but it’s really comparable to your standard sweet BBQ. But this dish from Wholesomelicious is a slightly healthier version, relying on the sweetness of the strawberry and the tanginess of balsamic vinegar. And the best part, it comes together in just 20 minutes!
Unique Strawberry Recipes: Salads and Sides
Creamy Strawberry Broccoli Salad
Have you ever had one of those potluck dried ramen and broccoli salads? This is that salad all grown up. The Recipe Critic combines strawberries, almonds, broccoli, and feta cheese with a light creamy dressing for something that sounds like the perfect dish to bring picnicking.
Strawberry Salad with Balsamic
Love and Lemon’s sweeter take on a balsamic salad not only adds on fresh strawberries, but pecans and avocados as well to give it protein and an earthier taste. It’s super quick to pull together, and perfect for when you’re dreading turning the stove on warm day. And it looks so pretty!
Unique Strawberry Recipes: Desserts
Easy Frozen Strawberry Dessert
This recipe courtesy of Sweet Spicy Kitchen is reminiscent of those classic icebox cakes, with light and fluffy whipped strawberry cream topped with graham crackers and whole strawberries (to really drive home the strawberry theme here).
Strawberry Rhubarb Cobbler
Last, but not least, is this scrumptious but lighter version of Strawberry Rhubarb Cobbler that I concocted last summer. I’ll definitely be making it again this year many, many times. The strawberries are nearly caramelized here, which makes them the perfect contrast to the tang of rhubarb.
