While I’ve got nothing against a good bottle of wine, I often welcome my dinner guests with a special beverage as soon as they arrive. Offering a “signature” cocktail or mocktail that’s pretty to look at and tastes slightly exotic gets the evening off to a festive start.
I do always have a bottle of wine ready for those who want it. But when given the option of starting the evening with a signature beverage, probably nineteen out of twenty guests take me up on the offer. It’s one of those little touches that makes guests feel extra welcome, especially those who don’t drink alcohol.
These days, I’ve noticed that more and more people are eschewing alcohol. But too often, the beverage choices for people who don’t drink liquor are limited to soda, ice tea, or even just plain water.
Teetotaling friends will be extra appreciative of the chance to quaff this pretty, refreshing Coconut-Lime Cucumber Mocktail. But really, this tasty mocktail is a beverage everyone will enjoy. It’s a perfect way to toast a summer evening spent with friends!
Lime and coconut are the most pronounced flavors in this mocktail, with the subtle, fresh taste of cucumber and mint coming through as well. The complex, tart, sweet taste makes this mocktail suitable for adult palates. However, you can adjust the amount of sugar in either direction, depending on your personal preferences.

- Coconut water
- Cucumbers
- Lime juice
- Fresh mint leaves
- Sugar
How Do You Serve Your Own Coconut-Lime Cucumber Mocktails?
My favorite way to enjoy these tasty mocktails is as is, simply poured over ice. Be sure to include a slice or two of cucumber and a sprig of mint for garnish.
If you like your beverages bubbly, top off your glass with a splash of lime seltzer. You can even mix the seltzer in a ratio of 1 to 3 with the coconut cucumber mixture.
Also, turning Coconut-Lime Cucumber Mocktails into a festive summer cocktail is easy! Just add an ounce of vodka or gin to the glass. It’s especially good with flavored vodkas such as coconut, cucumber, and mint.

Ingredients
- 6 cups unsweetened coconut water
- 2.5 cups lime juice
- 1 large English cucumber, thinly sliced
- 60 fresh mint leaves
- ½ to 3/4 cup of white sugar
Instructions
- Place mint leaves in the bottom of a large pitcher. Slightly crush the leaves with a large wooden spoon to help release flavor.
- Pour coconut water and lime juice into the pitcher. Vigorously stir in ½ cup sugar. Add cucumber slices and stir again. Place pitcher in the refrigerator for two hours. Taste and adjust for sweetness, adding more sugar if desired.
- Serve plain over ice or topped with a splash of soda. (An ounce of vodka or gin can be added to each glass if you prefer cocktails instead of mocktails.)
