Coconut-Lime Cucumber Mocktails

Ingredients

  • 6 cups unsweetened coconut water
  • 2.5 cups lime juice
  • 1 large English cucumber, thinly sliced
  • 60 fresh mint leaves
  • ½ to 3/4 cup of white sugar

Instructions

  1. Place mint leaves in the bottom of a large pitcher. Slightly crush the leaves with a large wooden spoon to help release flavor.
  2. Pour coconut water and lime juice into the pitcher. Vigorously stir in ½ cup sugar. Add cucumber slices and stir again. Place pitcher in the refrigerator for two hours. Taste and adjust for sweetness, adding more sugar if desired.
  3. Serve plain over ice or topped with a splash of soda. (An ounce of vodka or gin can be added to each glass if you prefer cocktails instead of mocktails.)
