Healthy Beef and Beer Stew (Slow Cooker)

  • Author: Marie Bostwick
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1lb beef sirloin, all visible fat removed, diced into ½ inch pieces
  • ½ cup diced onion (1 small onion)
  • 2 T flour, divided
  • ½ tsp salt
  • ¼ tsp fresh ground pepper
  • 1 T olive oil
  • 1lb potatoes, ½ inch dice
  • 2 ribs celery, sliced
  • 2 large carrots, peeled and sliced into coins
  • ½ ounce sundried tomato, torn into small pieces
  • 1.5 cups beer
  • 1.5 cups low sodium beef broth
  • 1 bay leaf
  • 1/2 tsp garlic powder
  • 1/2 tsp thyme

Instructions

  1. Toss beef pieces with a 1 T flour, salt, and pepper in plastic zipper bag or bowl, coating all pieces.
  2. Add 1 T olive oil in non-stick pan over medium high heat. Add floured beef pieces and onion to pan. Cook until onion is soft and beef is browned on all sides. Place beer and onion in the slow cooker. Add a little of the broth to the pan over low heat. Scrape up any browned bit from the pan. Pour the liquid from the pan into the slow cooker.
  3. Add potatoes, carrots, celery, sun-dried tomato, beer, remaining broth, bay leaf, garlic powder, and thyme to slow cooker and stir. Place lid on slow cooker and cook on high for 6 hours.
  4. Ladle a few tablespoons of the broth into a bowl. Sift in the remaining T of flour and whisk to make a slurry. Pour it back into the slow cooker and cook (still on high) for about 15 minutes, to slightly thicken broth. Remove the bay leaf. Serve.
