Easy Peach Crostini Appetizer

Ingredients

Scale
  • 1 baguette
  • 1/2 cup olive oil
  • 8 ounces plain chevre
  • ½ tsp fresh ground pepper
  • 1 T milk
  • Prepared Balsamic Glaze, such as Nonna Pia brand
  • 1 or 2 large peaches, peeled and sliced
  • 6 large basil leaves, sliced into thin ribbons (Chiffonade. See post for instructions.)


Instructions

  1. Preheat oven to 400 degrees.
  2. Slice baguette at an angle in ½ inch slices (there will be more slices than needed for this recipe. See posts for storage ideas). Brush both sides of each slice with olive oil. Place on rimmed baking tray. Bake in preheated oven for 14 to 16 minutes or until golden brown, flipping slices halfway through. Allow to cool completely.
  3. Place chevre in a small to medium sized bowl. Add ground pepper and milk to bowl. Mix thoroughly with fork to create an easy to spread mixture. Set aside.
  4. Spead a generous tablespoon of the chevre mixture onto each Crostini. Drizzle a little of the balsamic glaze over each Crostini, using a side-to-side motion to create stripes of glaze.
  5. Top each Crostini with a slice of peach. Sprinkle a few ribbons of basil on top of each Crostini. Serve immediately.
