Easy Blackberry Coffee Cake Recipe

For the Cake:

  • 1 cup sugar
  • 6 T butter
  • 2 large eggs
  • ½ cup of milk
  • 1 tsp vanilla extract
  • 1 ¾ cup of flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 4 cups blackberries, divided

For the streusel topping:

  • ½ cup small chopped pecans
  • 3 T brown sugar
  • 2 T butter, cut into small pieces

Instructions

  1. Heat the oven to 375 degrees
  2. Cream butter and the white sugar together, using a hand mixer or stand mixer. Add eggs, milk, and vanilla extract and beat until smooth.
  3. Place the flour, baking powder, cinnamon and salt together in a bowl and stir. Beat dry ingredients into wet ingredients a little at a time, creating a smooth, fairly thick batter.
  4. Using a spatula, gently fold 3 cups of the berries into the cake batter. (Don’t worry if the berries break up.)
  5. Spray a 9×7 or 8×8 glass baking dish lightly with cooking spray. Pour the batter into the prepared dish and place the remaining cup of whole berries onto the top of the cake.
  6. Place brown sugar and pecans into a small bowl and stir. Sprinkle mixture over the top of the cake and berries, then dot with small pieces of butter.
  7. Place cake into the oven and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Remove cake from oven and allow to cool before serving.
