Ingredients

- ½ lb raw, peeled and deveined shrimp, chopped small
- 1 egg
- 2 green onions, white and pale green parts, chopped fine
- ¼ small bell pepper, diced fine
- 1 tsp Old Bay Seasoning
- 1/3 cup panko bread crumbs (can sub regular bread crumbs)
- 1–2 T olive oil
- 2 tsp fresh chopped herbs such as parsley, basil, or dill (optional)
Instructions
- Crack the egg into a medium-sized mixing bowl and whisk to combine the yolk and white. Add the rest of the ingredients to the bowl and stir to combine.
- Form the mixture into small patties. (If making shrimp burgers, make one large patty per person.)
- Heat oil in non-stick pan over medium-high until shimmering. Add patties to pan. Cook 4-5 minutes on each side, until the shrimp is cooked through. Serve.
