Ingredients

  • ½ lb raw, peeled and deveined shrimp, chopped small
  • 1 egg
  • 2 green onions, white and pale green parts, chopped fine
  • ¼ small bell pepper, diced fine
  • 1 tsp Old Bay Seasoning
  • 1/3 cup panko bread crumbs (can sub regular bread crumbs)
  • 12 T olive oil
  • 2 tsp fresh chopped herbs such as parsley, basil, or dill (optional)

Instructions

  1. Crack the egg into a medium-sized mixing bowl and whisk to combine the yolk and white. Add the rest of the ingredients to the bowl and stir to combine.
  2. Form the mixture into small patties. (If making shrimp burgers, make one large patty per person.)
  3. Heat oil in non-stick pan over medium-high until shimmering. Add patties to pan. Cook 4-5 minutes on each side, until the shrimp is cooked through. Serve.
